    Your numbers honestly are pretty good given you're back down to normal by 2 hrs. I don't think I'd be down to normal of 5-6 mmol if I had 4 slices of baguette. Am guessing your hba1c and fasting are all ok as well? I have been eating really strict to try to keep myself from spiking too high...
