    Fat, protein and carbs are components of all foods, so cream is mainly fat with a bit of protein and carbs. Cheese is 65 fat : 35 protein with little carbohydrate, etc. Over a day you might eat 100 grams of fat, 75g of protein, 40g of carbs, that sort of thing.

    Car crash radio. I think it was about 20 minutes into a half hour programme before the presenter (not the "experts") even used the word carbohydrate. Way too much emphasis on "sugar". I also think we seriously need different words for T1 and T2 to have any sensible public debate.

    It goes up because your liver produces / releases glucose into your blood stream to keep you going - there can be a "dump" in the morning on waking called the "dawn effect". You don't have to be overweight to become diabetic, insulin resistance occurs in thin people too.

    Anything over 5 grams of carbohydrate per 100 grams of food has me checking the ingredients for added sugar and starch.

    Well done for writing. The recent debate has been largely data free - obesity hasn't increased rapidly over the last 10 years for example and sugar consumption is declining so I don't think bringing facts to the debate will be welcome ;-)
