Low carb diet advice please

Hi everyone,

So I'm planning on going back on a low carb diet after my last HBA1C of 65 down from 69 in Jan. I have been doing this on and off since diagnosis in 2020 and pretty much know what I can and should eat to reduce my blood sugar. The one thing I'm concerned with this time is that my cholesterol has increased on all the levels and I don't know if that means I'll have to look at my usual low carb eating plan, which for me includes eggs for lunch pretty much every day, some cream with sugar free jelly and berries for dessert a few days a week and full fat cheese particularly for snacks, obviously meat and fish as well as vegetables.

Would these still be ok for me to eat? The internet is full of completely conflicting advice on this and eating this way in 2020 actually brought my cholesterol down so I'm hoping it will improve once I get my act together with my eating again.

I know DN will suggest a statin which I really don't want to do yet, I have an underactive thyroid as well which they said the results weren't ideal with in Jan this year but I've been on meds for that for many years, I know that can also affect cholesterol so maybe time for an increase in those meds? It's a minefield trying to figure all of this out and I always feel you have to be prepared before speaking to any GP/DN about this because they're in so much of a rush to get you out you just get steamrollered. Thanks for any advice on this.

Two things to note, were your bloods taken fasting. Not all surgeries advise fasting beforehand these days, but depending what you eat that can affect your results.
Secondly if I have things to discuss, especially if possibly contentious I write everything down beforehand. It’s hard to stand up to professionals but be prepared to say something to the effect of “you haven’t answered all my questions yet”.
 
Yes, they were fasting bloods, nothing but water for 12 hours prior to testing so the results should be accurate.
I will try the writing things down before I go in to see DN as half the time I end up forgetting things as I'm being rushed back out and I end up confused.
