Hi I’m julieclarke I’ve joined to find out more about T2 diabetes

I like carrot and peas sweet corn broccoli cauliflower

cauliflower is my number one favourite im making it at new years with some cheese sauce
followed by cucumbers, aubergine (instead of pasta for lasangu) greenbeans was a new veg found out i enjoyed with last stay in hospital. carrots being my final in the top5. peas not had for a while do enjoy eating a few straight from the plant during the summer
 
I love cauliflower, broccoli, mushrooms, green beans, and cabbage. I also like mashed swede or celeriac instead of potatoes. I hate sweetcorn.

Sprouts are nice but only if cooked with bacon and cream!
 
They are similar in carbs to potatoes.

Have you tried butternut squash? It can be cut into shapes like chips and roasted. Tastes a bit like sweet potato but lower in carbs. You can buy it in Tesco.
 
Sprouts are lovely boiled until al dente, with salt and pepper.
I'm a big sprout fan, but I'm lucky enough to be able to grow my own. Baby sprouts cooked as soon as they are picked are a very different prospect to the overboiled "school sprouts" which put many people off them for life when given to them as children.
