"What have you eaten" Parallel Chat

Well, I made my Lazy Mediterranean Chicken Pilaf, and it wasn't nearly as nice as I remembered! Followed it up with raspberries and Greek yoghurt. Have bought some "poachies" so will try to poach myself an egg in it in the morning - I have never mastered the art of poaching an egg other than in one of those silicone cups, which I think are technically coddled, aren't they? Eating out tomorrow night at a book group meeting - lookiing at the pub's menu, I'll probably go for a Greek salad with chicken. We shall see!
 
I'm not confident poaching eggs either and have tried various different ways over the years. The only ones that are acceptable, ie not all watery and ragged, all amount to coddled eggs though. Nothing wrong with coddled eggs - they're just not the same thing.
 
Planning on chilli con carne today for dinner using more of my garden tomatoes and a couple of chillies. I was also planning on having the last of batch of my hm hummus for lunch but wonder if that may be too many beans on one day - although my blood sugar copes with smallish amounts of pulses that may be too much!
Duller rainy day atm but hoping to get out in the garden when it stops raining as I'm out much of the day tomorrow. I've got someone coming next week to get rid of some old, now rotting, decking and need to start clearing that part of the garden ready for the job.
 
Rain today so I'll have to dodge the showers to get my new patio 'opal' plum tree planted up - while plums are never really going to feature heavily on the menu, I would like some just for occasional treats and they'll mostly be given away and frozen. I have quite a little collection of patio fruit trees now, which are ideal for me as there won't be large amounts of fruit and they don't take up a lot of space in the garden.

Porridge for breakfast, tuna salad for lunch and the last of the chicken and mushroom for tea.

It worked! First time ever, I've managed to poach an egg without it going everywhere! I am very pleased. My sister, who used to run a B&B for many years, can poach eggs beautifully, but I never have been able to could! So breakfast was a poached egg on a thin slice of seeded sourdough toast spread with black pepper Boursin cheese! Lunch is about to be a pork pie and salad (both so heavily reduced in Lidl that it would be rude not to!), probably followed by a little ice cream, and supper is going to be at a pub, and, looking at their menu, I think I'll choose a Greek salad served with chicken. We shall see - that part is subject to change!!! They do 3 small plates for £20, but I couldn't possibly eat 3, so may be able to share with someone.
 
Update: I had a lovely evening - it's so rare I am out in the evening on something non-Church-related; great to see friends I don't see very often. I ordered the Greek salad with extra chicken, which was a mistake as the chicken wasn't really worth it and didn't really need it! I ate it, though! Drank lime-and-soda as I didn't fancy alcohol.
 
Toast and marmite for breakfast - very off plan but I got moving in the garden and blood sugars didn't go too crazy. Halloumi salad for lunch and chicken with garden vegetables for tea.

I'm getting some hedge tidying done today, there's always a lot to do! I do it in small sections so as not to disturb wildlife too much, and always make sure there are no nesting birds before doing any major hacking.
 
Blood sugar high for me this morning - 7.3, came down to 7.0 after finger qi gong; I think I might be a little dehydrated after all that feta last night! Breakfast was a poached egg on half a slice of toast with cream cheese and Marmite, and the other half (Lidl's best seeded wholegrain) was cream cheese and gooseberry-elderflower jam which we bought at the farm shop last week. Rather good! I had meant to have overnight oats, and regretted having failed to put them on to soak either last night or early this morning. But am pleased the "Poachies" work. Lunch, I think, will be a flat mushroom topped with grilled halloumi and garlic jam, served on (probably half) an ancient grain roll. Supper probably curried chicken with wholegrain rice, but haven't got that far yet!
 
Breakfast was cottage cheese on Jacob's Crackers. Tea and water.
2nd meal is another experiment - mushrooms and onions fried quickly then butter beans from a tin, sweet corn from a tin and some chicken stock that I had in the fridge. Added a new pasta (new to me). It is a low carb wheat pasta - a bit complicated but there doesn't seem to be anything in the list of ingredients that I can't tolerate. They, as usual, are calling it 'low carb rice' but it's actually just Orzo. It was going to be chickpeas not butter beans, and I was sure there were a couple of tins of chickpeas in the larder, but I can't find them, so butter beans it is. It was either that or black beans. Smells good, so we'll see, in a few minutes, what it tastes like.
 
@Annb, your casserole sounds just like my kind of food, although as my husband says he dislikes butter beans, I would have to use cannelini beans or go back to chickpeas! Did you enjoy it? I did do the mushroom and halloumi on half an ancient grain roll, which we followed with a banana split (small scoop of ice-cream with half a banana, a teaspoonful of chocolate sauce and a handful of walnuts). And I had a couple of squares of hazelnut dark chocolate, too - not sure why I felt like chocolate, I don't normally! Then supper has just been mango curry chicken thighs (you par-cook the chicken pieces in the air fryer, then smear them with a mixture of mango chutney and curry paste and then finish cooking them) with wholegrain microwave rice and air-fried shredded cabbage/leek. Very good! Followed by a raspberry yoghurt and washed down with apple juice from the farm shop. And I have remembered to put my oats on to soak overnight!
 
It's Friday so it's salmon for dinner probably served with green beans. Breakfast will be a few roasted tomatoes on toast after a small portion of kefir and LC granola.May have cheese for lunch not sure yet.
It was very heavy rain here in the early hours, my lawn is back to its usual green and my tomatoes and raspberries are less bountiful . I'll try and do some more harvesting and freezing later when it dries up out there. I'm away on Sunday and Monday and have a guy coming first thing on Tuesday to take up some rotten garden decking and replace with gravel. So need to clear the decking area ready. More space for container gardening? Mind you there will be fewer tomato plants next year!
 
@shelley262 my lawn is green again too but the weeds recovered even more quickly than the grass :hilarious: My runner beans and french climbing beans are having a second go at cropping, it looks as good as earlier in the summer with plenty of flowers. If the weather doesn't go unseasonably cold I should get a good few more beans to freeze.

My tomatoes are mostly finished now, just a few trusses to finish up. I might bring the small sweet aperitif plant I started very late from a side shoot indoors for the windowsill where sungold did well.

A cheese sandwich for breakfast. Bad idea, but it was there, I was unable to move much and I was hungry. Tea.

It's been a bad day today- totally unable to wake up properly until now - just after 3 pm - and eyes not working as well as they might. Exhausted myself yesterday just getting down the ramp to the car and back up again when we came home from my leg appointment. The day is coming when I can't do it any more.

Luckily, my 2nd meal is ready to reheat - some more of the mushroom thing that I made yesterday.

I now have the tablets that the diabetes nurse prescribed for me - semaglutemide. Trying to make my plans to start taking it. I have to have all I am going to have today by 6 pm so that I can fast for 8 hours with no drinks and no pills, then have only a small amount of water to take the pill, then nothing else for another 35 minutes. Then I will be able to take my painkillers and have a cup of tea. The 6 pm limit is because I usually wake up about 2 am because my legs and hips are too painful to sleep any longer so I need to be able to take painkillers as soon after that as possible. Not sure what happens if I have a hypo.
 
@Annb sorry to hear about your woes - is there a chance leg bandaging could come to you? I know you're quite remote up there so maybe they can't do home visits.

That's very good news about the glp1 tablet! I hope it works out for you. Can you have some glucose tablets on hand for a hypo?

Do be aware that they may make you feel really sick until your system adjusts to them. I'm on (14 mg) for the Ascend Plus trial, and even though I've been on them for about a year now, my insides still misbehave at times (either "won't go" or "can't stop"). I don't think it will matter if you take painkillers at 02:00, and then take your tablet when you wake for the day at a more civilised hour, though, nor if you have a hypo and have to have a sweet drink.
