"What have you eaten" Parallel Chat

Last minute change of plans today - switched to Wednesday - so I've got clear time I wasn't expecting but will make good use of! Once rain stops I'm going into the garden to get more sorting done. Shifted a lot of pots around yesterday - who needs the gym when you have a pot filled garden! I love my ceramic pots they look lovely but plastic are more practical and lighter.
Managed to bake yesterday - made a low carb loaf and 6 rolls so I'm stocked up for this week. Today I will be using up the leftover roast chicken in a spicy wrap with hummus and salad for our main meal.
 
Got the grass all cut yesterday, just need to go around the edges and cut back some long bramble and ivy shoots from the hedges now. I should be able to do that today, it's a lovely late summer day here with 23c - I thought I saw rain forecast for today but either the forecast changed or I misread it! Still, I'm glad I got the main cut done on the grass.

Porridge for breakfast, vegetable soup for lunch and haven't decided on tea yet, it might be fish fingers.
 
Damp and very humid here! Mr Redboots (usually referred to as the Swan Whisperer) went for a run this morning, and then had to dash down to the Youth Club as the person who runs a French playgroup there on a Monday morning had managed to lock herself out. She had made crepes, and gave him one, so he takes that as a win! I, meanwhile, have had a most peculiar breakfast and I don't know what I was thinking! I had planned to have a poached egg on baked beans on a toasted mini-wrap. I did not intend to add a very large mushroom and not one but two frankfurter sausages and cook the lot in the microwave! I didn't do the wrap in the microwave, but did put a rather unnecessary amount of butter on it. What was I thinking? Washed down with fresh orange juice and black coffee.

Lunch will be cold sausage from last night, probably in a mini-wrap. I think I'll put the second packet in the freezer. I think I'll make a huge vegetable stew for dinner. We have a meatloaf from Lidl's Polish week in the fridge that wants to be used this week, but it can be had with leftover veg tomorrow. Debating going and soaking some beans to add to the stew and make it a complete protein, but I do have small tins from France, and we are going there again in a fortnight, so probably cba! We shall see. And there will doubtless be ice cream in there somewhere, and a fruit yoghurt - I have some kefir that is "cooking" at the moment, but it won't really be ready before tomorrow, so we might have the other half of the starter pot with fruit, or I might even make a dried fruit compote to have with it - apricots, prunes, sultanas/cranberries soaked in Earl Grey tea. Maybe. I woke at 06:00 this morning, and think I maybe need a nap. Or maybe I'm procrastinating from starting next Sunday's sermon, which is going to have to be written more-or-less from scratch!
 
It hasn't been a good day. I had a ridiculous breakfast, as stated above, but really felt as though I might be getting a migraine. I do get them once in a great while. I did the qi gong finger exercise for it, and the threat receded, but I've felt "off" all day and haven't had any exercise, nor done any of the things I wanted to do, just sat in my chair and read and/or messed about on the computer. Lunch was, as I planned, a mini-wrap with butter, my brother's delicious plum chutney (nearly finished, alas) and a cold sausage, followed by raspberry sorbet with a dollop of creme fraiche. And supper was a vegetable stew with a poached egg, which was a dismal failure because I ran out of time and neither the butternut nor the cauliflower was properly cooked, and had to be fished out and microwaved. Then we forgot we'd left it cooking gently and it has caught slightly, although it should still be edible tomorrow when we will have it with meat loaf (or we might have it on Wednesday and have other veg with the meat loaf, or a tomato sauce of some kind.....). The meat loaf came from Lidl a few weeks ago, but is still well in date.
 
Gardening is on my agenda again this morning although my muscles have been protesting at too much lifting of pots, weeding and digging. Out early tomorrow for a long day so want to get certain jobs finished today.
I haven't cooked meatloaf in years @Mrs Redboots but notice that there's a 'live' cooking session on this Thursday afternoon making meatloaf using low carb Panda Flour so will watch with interest and may add it to my menus if it appeals. Something else to serve with a hm tomato sauce - did I mention I have tomatoes to use up! Talking of tomatoes I'll be roasting a few for breakfast, hummus for Lunch with celery and its cod in a sauce for dinner with green beans.
 
Morning, all! Still a bit low-energy this morning, but better than yesterday. Breakfast has been overnight oats with the usual trimmings, a fig, orange juice and coffee. I have a lot to do today, so hope I can find enough energy to do it!
 
Breakfast: 2 RyVita with some ham and cheese - made 2 but couldn't look at the 2nd. Tea. No insulin after the bolus much earlier. BG was 7.9 - now down to 6.6.

2nd meal will be cottage cheese with whatever salad veg I can find - a bit sparse but there must be some bits and pieces in the fridge.
 
Gardening is on the agenda for me too today, must fill up the garden bin for collection tomorrow. I'm feeling better today after a couple of days of feeling a bit rubbish, not sure why but I'm glad it seems to be gone.

I really must get the garden tables reset for winter, and decide where all the elephant garlic, regular garlic and shallots are going - they're due to arrive any day now. I'll probably put in a few regular onion sets as well - the cheapo ones from bargain shops will be fine. All the alliums will either be on tabletops or in small-medium containers.

Porridge for breakfast, tuna salad for lunch and freezer surprise for tea with garden vegetables.
 
Well, I actually did everything that was on my To-Do list; phoned the hairdresser to make an appointment; made soap; went to Lidl; finished Sunday's sermon and sent off the Order of Service! I feel very accomplished! The downside was that I haven't eaten very well - lunch was a Cornish pasty followed by ice cream with a dollop of creme fraiche (memo to self: buy more tomorrow) and supper was Lidl's meatloaf hotted up with sautéed aubergine, bottled tomato sauce (for pasta, not ketchup), and microwave vegetable rice. It was good, but a home-made sauce would have been nicer, I think. And definitely better for me. And I should have cooked another vegetable, but didn't. But I have made my step count today, which is good.
 
On the road again for 3 nights, I finally have some subsequent days off from work and I'm going to make the best of it and call it a holiday!

I'm sleeping in my car at Schokkerhaven, which has a large and empty parking lot with a wonderful view and a place to swim tomorrow morning.
I'll bring the shampoo because my friend has promised to cut my hair tomorrow afternoon.

I pre-boiled a cob of corn and some eggs before leaving this morning, and decided not to dabble with the wiggly camping gaz thing in the wind but have a cold meal instead.
Cob of corn with butter and salt, duck egg with mayo and salt, cottage cheese, some smoked ham shared with the dogs.

Earlier today a police car drove by so I more or less expected a second visit.
I expect this place is popular with drug dealers and illegal sex workers because of its remoteness.

Indeed, a couple of hours later a police car stopped by my car so I got out to tell them all about this wonderful spot and the car I had for only 3 weeks which is perfect for camping!

They agreed on this being a great spot and informed me that they could fine me for sleeping in my car.
And that they were very much not of a mind to do so, and enjoy my night!

I think I'll call my 300 euro Renault Kangoo a motor home from now on!
It definitely feels like one.

I added to my meal with some crisps as I luckily misjudged the dose on my meal.

A late night snack of fuet sausage has just been had and I expect some nuts will follow soon.
 
Like MrsRedboots I've been feeling "off", bit migrainey, very sinusy. Then trip to dentist today revealed nasty infected gum. Whether it's all connected who knows?
Foodwise, cooked first autumnal meal on Saturday - aubergines baked with tomatoes and cheese. Was going to add beef mince but cupboard was bare so skinned sausages instead. Very tasty result did us for 2 meals each. Monday was steak from the freezer - but it turned out to be lamb! Tonight had vegetarian guest so tiny piece of quiche for me, with cauliflower and broccoli topped with pecorino shavings amd mushrooms with garlic and chives.
Made a rice pudding as marital communication had broken down resulting in an over supply of milk. The men demolished it in one go. I just had a spoonful.

They are totally connected! I know when my mouth was in very poor shape I was constantly unwell.

Could I have your recipe for aubergines baked with tomato and cheese? Sounds just like my kind of food, and I might cook it with leftover meatloaf tomorrow - tonight will be the 2nd half of Monday's vegetable stew, and I think I'll had half a large tin of cannellini beans and blitz the rest to thicken it. We shall see... my meal plans are apt to change...
 
Breakfast was bits and pieces. A bit of ham, a few teaspoons of cottage cheese, some cucumber. I didn't make anything with them. They were just there while I thought about what to do with them and just, kind of absent-mindedly, found their way into my mouth. Tea.
2nd meal. Imagination has gone awol. Might make some kind of soup. There are some leeks in the fridge and a butternut squash in the larder. Can do something with those, I should think. If I can be bothered. Right now, I can't, but we'll see.
 
Could I have your recipe for aubergines baked with tomato and cheese?
Not a recipe as such. I just sliced 2 aubergines, fried them in lard/butter until just soft them layered in an oven proof dish with jar tomato (pasta) sauce. The middle layer was the sausage meat (also pre fried a little). Very top was thick layer of grated cheeses (mix of whatever was in fridge)
So layers were tomato, aubergine, meat, tomato, aubergine, tomato, cheese.
Bake until soft and bubbling.
Even better if cooked ahead and reheated
 
Skipped breakfast as off to trainer at 10:00. Worked hard , but she's one who pushes carbs "for muscle repair". I know it's baloney but still guzzled a scone (left by our vegetarian guest)!!! Why do I do it???
Lunch was 2 lc crackers, M&S ones, with pecorino and gouda and cucumber. A no sugar jelly with cream.
Dinner was steak and salad (got the right meat out of the freezer this time :) )
