    Any information on quinoa?

Obviously my BGs were climbing slowly over the 4 hour period but I don't know what happened after that as I went to bed. We almost always have our main meal in the evening, but I'll try the same dish for lunch soon and continue to test for the next six hours. I hope that'll give me a more...

    celeriyuck!

Fergus, you just widened my horizons with your ideas on cooking celeriac. I'll be giving them all a try in the near future. Thanks.

    Any information on quinoa?

Hi Suzi - Yes, I cooked it as instructed on the packet and I was quite impressed. It's tasty with a slightly nutty taste and makes a good substitute for rice. The chili con carne was very low carb - its ingredients are onions, garlic, minced beef, paprika, cumin, a teaspoon of tomato paste. a...

    Any information on quinoa?

I've heard that quinoa is good for diabetics so when I saw it on sale in our local supermarket I bought a packet. Doing some internet research I discovered that quinoa is a South American product that is a seed and not a grain which is a good substitute for rice or couscous. It is high in...

    Back problem

I've spent my life avoiding gyms as I loathe exercise for the sake of it, although now I take more since being diagnosed. I did develop a bad case of sciatica a couple of years ago so I know how debilitating back pain can be. I don't have any advice, I'm afraid, but I offer my sympathies to...

    Bill's Travels

The only thing we had to do was contact Pickfords and have them deliver our furniture. That was easier said than done. I had been receiving emails for a while telling me that I was going to have to pay more. I replied by pointing out that I had signed the contract, drawn up by them, that...

    Bill's Travels

Not long after our return an estate agent brought two South African guys along for a viewing. They apparently liked the look of the property. They chatted to us for a while and then left. We thought they were pleasant. Even so, as they had been noncommittal we weren’t holding out too much hope...

    Birthday Triffle

Would this have anything to do with John Wyndham's classic The Day of the Triffles by any chance?

    Bill's Travels

Flying across the States was a fascinating experience as we crossed deserts, plains, the Rockies and farmlands. As we approached San Jose we saw fields of the strangest hues – yellows, reds and purple. It turned out they were the local crops, radicchio and other salad leaves. We found Claire...

    Books for Diabetic's

I'd go along with recommending Type 2 Diabetes - The First Year. It certainly answered many of my questions when I was diagnosed in 2008. For cookery books, that would be a more subjective and personal choice, but there are plenty of low carb cookbooks to choose from, if you decide to go that way.

    A new year - a new worry!

And I also see that this story continues to spread the old canard that diabetes is caused because we all sat on our backsides for most of our lives, stuffing our faces full of sweets and junk food. This was certainly not my lifestyle, nor that of the other diabetics I know. Can we lynch the...

    Hard up?

Now what is really funny is that a member of the vicar's congregation got so mad at the advice he was giving out that he tipped a bucket of pasta over the said vicar. And the parishioner paid for the pasta himself.

    Post Your Recipes Here!

Re: Recipes. Well, Cugila, you gave me pause for thought there as this is one of those recipes that depends on what's in the fridge and/or the vegetable basket. However, according to the Collins Calorie Counter, the carbs for individual veggies are as follows: Broad beans 11; String beans 2.9...

    Post Your Recipes Here!

Re: Recipes. Here, for Helen who asked for help with some low carb soup recipes, is the first one I've been using. This is a great soup to make as it can be eaten as a main dish, as a prelude to a meal or as a snack. You can use virtually any vegetables you have knocking around. For the leek...

    Bill's Travels

The following year having been invited by Claire and Terry to visit them and Bob, we decided to visit California for the first time. We thought we’d break the flight with a few days in New York so we booked our tickets from Malaga to Heathrow and then Heathrow to New York. We checked in at...

One final little story which has been suggested may be of interest here. I’ve already mentioned that Claire drove us to Shelburne Falls but haven’t mentioned that we went into an art gallery there which features a very fine glass artist named Josh Simpson. We were quite taken with his creations...

    Morrisons Soup

Soup is actually one of the easiest dishes to prepare at home. At a quid a pop Morrison's soup sounds expensive. Try this one - half a pound of mushrooms, chopped. I onion, chopped. 1 pint of chicken or vegetable stock, 2 tablespoons of corn oil. Warm the oil in a saucepan, add the onions and...

Flu jab appears to equal Flu

I've been resisting the flu jab for years now, but our doc gave me a stiff talking to about having it now that I've been diagnosed T2. We both went along on Thursday as the Luxembourg government is offering the jab to everyone free of charge. Well organised procedure, filled in allergy forms...
