    I use cauliflower rice often. Fry a few chopped onions, mushrooms and a bit of garlic then add the cauliflower rice. Actually prefer to to ‘normal’ rice.

    I was on that amount of gliclazide and had to reduce it when I started lchf. Didn't reduce it enough at first and had a couple of bad hypos. So be careful. Ps Never liked olives before but now I love them! Glad my taste for red wine hasn't disappeared.

    I was type 2 for 9 years before I discovered this forum and low carb. Was on lots of meds and next step insulin. Drastically reduced carbs and meds and get best bs levels ever. Must be a bit more difficult to go lchf as a veggie but I know a lot do. Best of luck.

    You may feel shaky because you are used to having high sugar levels. Your levels now are probably not too low but may be normal. Unless you get a meter and check you can't be sure.

    I used to work in a primary school office and helped 2 children from age 4 who have type1(finger pricking and dealing with their hypos) I feel I am much luckier developing diabetes age 50 than those who were diagnosed at 2 or 3 years.

    Recently on a cruise I ordered the sugar free pannacotta for dessert, it came with a pineapple pure and slice of pineapple! So they haven't quite got the hang of things. Best to stick with cheese.
