This is a good idea!from what you listed I would say some riccotta with a few berries in it.
I'm not really fond of peanut butter, or I never found a good quality one - I only find it sometimes at LIDLMy personal choice is 8 or 10 pimento stuffed olives, OR a stick of Celery spread with 20g of Brussel Pate OR peanut Butter. Works for me.
Olives in a small bowl, interspersed with 1 or 2 sun dried tomatoes in sunflower oil makes a tasty treat when you need a savoury delight pre-bed.I get the munchies in the evening, it went away for a while, and an 8oz bag of peanuts doesn't do my FBG any good. I like the idea of olives. No food for me today until 7.30pm, then I must resist anything else until tomorrow
Low carb hot chocolate is a brilliant late night hunger pang killer, as well as being deliciously decadent.

I go the peanut butter, or cheese, or kefir route.
To my delight, homemade kefir doesn't seem to impact my blood glucose at all.
