1 minute microwave scrambled egg options

No longer being prescribed metformin.
Looking for things to add to microwaved scrambled egg to make it a quick breakfast alternative that takes no additional preparation time and no frying etc. I.e. microwave or no cook options. Note I have other options such as omelettes and fried salmon I use on days I can afford to take a longer breakfast, but at present I'm reduced to granola or Weetabix if I'm in a rush and this has been one of my bugbears for the last year.

So far I have;

1) stir in some cream cheese.
2) Mix in some ham or chorizo.
3) Put on some toast (low carb... maybe even normal if one small slice)
4) mix in some cold salmon
5) ???

And then I run out. I've tried some searching but 90% of options turn into "add to a form of bread/ muffin /etc" and that sort of defeats the purpose.

Precooked and kept in fridge: bacon, sausage, leeks, veg such as peppers, broccoli
I often cook more than is needed so that there's plenty of tasty options for the next few meals too.
For example tonights dinner was roast chicken and veg so there is now xold chicken, roasted peppers and cooked leeks in the fridge ready for adding to tomorrow and Wednesdays dinners and lunches
 
Keto egg loaf (egg, cream cheese, butter, in simplest form; all other ingredients optional) is a nice make-ahead option. Texture stays nice on reheating.

It takes nearly an hour to make, but only about 5 minutes of that is prep, even counting lining the leaf pan with parchment paper. So, I'll start it when doing something else in the oven. Really, I should start doing two at a time, and see how well it freezes.

Once the loaf is ready, what next? The two of us will eat it a bit at a time over the week ahead, in various forms.
- We'll cut bread-thick slices to sizzle in butter and serve as French toast / eggy bread.
- Thin slices in a wrap with some combination of bacon, ham, cheese, or even ham and cream cheese with sugarless jam.
- Thin slices, hot, with butter and no-cal fibre syrup. Bacon or sausage optional.
- Thick slices cut into sticks to wrap in wafer-thin ham and serve hot or cold.
- Any thickness slices served up on a plate hot, like any egg dish.
- Beyond breakfast or brunch, cubes or ribbon-like strips in soup or stir-fry.

The loaf can be sweetened or not. Spiced or not.

(I've been wanting to do a savoury version, perhaps with nutmeg at (pre-wilted, pre-drained) spinach, but haven't yet, so I'm not sure what that would do to the texture. And, I guess that gets us back to crustless quiche territory. )

Make some basic chaffles ~(Egg & Cheese) freeze & take them out as you need, eat warm or cold, top with whatever you fancy or just plain, i'm quite partial to a "pizza" style one, tomato puree, salami/pepperoni and a bit more cheese, but not everyone likes pizza for breakfast:cat:
 
Cheers for the suggestions. The breakfast muffins or another type of low carb might work, sort of an eggs benedict idea.
