So, I was diagnosed ten days ago but still not seen any medical professional, although due to attend the diabetic clinic on Thursday. Thanks to great advice on here I have been following a strict very low carb diet.

Been taking blood sugar readings - average 5.9 some hours after food. Rightly or wrongly it was suggested I eat something high in carbs and take a reading. So I had two slices of toast this evening, and within an hour the reading had gone up to 6.9 and after another hour 8.1.
I'm not quite sure if this is within "normal" range, or even if there really is a "normal". But wondered what others thought. Thanks in advance.
 
These are the guideline ranges recommended by the NHS

Non-diabetics
Before meals 4 to 5.9, at least 90 minutes after meals under 7.8

Type 2 diabetics
Before meals 4 to 7, at least 90 minutes after meals under 8.5

It all depends on which you prefer to aim for - the non diabetic levels or the T2 levels. You have to set your own targets.

How long did it take you to come down from the 8.1? That is relevant. Also were you on your way down at 2 hours, or still rising? If you want to conduct experiments with carbs like toast, you could test half hourly from 1 hour onwards to get the best results.
 
You can see that if you want to keep to normal levels you need to eat low carb - it will shock your medical people speechless - at least it seems to have done for mine.
If you want to have bread-like foods, try the Lidl protein rolls. I am so sensitive to anything with flour, but can eat them and a lot of others can too.
I saw that the longer I stayed eating low carb, the lower my average numbers sank down.
