6 Foods with Hidden Sugar

For anyone longing for ketchup - a low carb version
Home made ketchup with grown up tastet
A ketchup with a more grown up and spicy taste for all of you missing ketchup.

INGREDIENTS

  • 250 g tomatoes
  • 5 cm leek, the white part
  • 50 g butter
  • 1/4 organic vegetable stock cube
  • 200 ml water
  • 100 ml tomato puree
  • 2 tbsp balsamic vinegar
  • 2 tsp chili flakes
  • 1 tsp worcester sauce
  • 1 tsp honey or your choice of sweetener
  • 1 sliced clove of garlic
  • 1 ml ground caraway seeds
  • 1 ml ground cloves
  • Sea salt
DIRECTIONS

1. Dice the tomatoes and slice the leek thinly

2. Fry the diced tomato and sliced leek with the tomato puree in a pan

3. Add all other ingredients, bring to boil and let it simmer on low heat for 30 minutes

4. Use a hand mixer and mix the ketchup in the pan

5. Let it simmer for another 15 minutes

6. Taste the ketchup and decide if you need to increase, the sourness, sweetness or saltiness

7. Pour the finished ketchup into cleaned jars, put on the lid and let cool

8. Store the ketchup in the fridge
 
They are all, without exception industrially manufactured 'foods' . Keep away from them and you won't get the hidden sugars because you know what you've put in it. ( I do eat some bread and buy it rather than make it . They don't add sugar here in France except to some foul pre sliced stuff with a shelf life of months and appropriately called American Bread)

My tomato sauce which tends to go on chicken rather than pasta, depends on the time of year At this time of year I'll make it with fresh tomatoes, garlic, herbs and spices . In winter I'll replace the fresh with tinned tomatoes + tomato puree. I don't really have a recipe. ( though I confess that I might put a tiny pinch of sugar if the tomatoes are very acidic)
 
The good news is sugar is being seen as more 'bad' nowadays. (The article is from 2010).
While it was true low fat used to have high sugar, it's not so much the case with everything now.
Always read the label though.
