I'm afraid I can't help you with your insulin problems as I an a type 2. I hope you get it sorted out soon.
As for the food I eat, the biggest effect on my diet has been to stop eating the junk food I used to eat. Doughnuts, choc chip cookies, jumbo packets of crisps, cream cakes and dozens of other things were all my favourites and it wouldn't be unusual for me to eat over 5000 calories in a day.
Since diagnosis I have not eaten any of my usual junk and my daily calorie intake has fallen to well under 2000 per day. I'm losing weight, feeling much better and the quality length of my sleep has improved a lot.
My diagnosis of T2 seems have acted as a major motivator for me to sort out my destructive eating habits.
I'm certainly reading labels more than I used to to make sure I don't overdo it on carbs. I am eating a lot of the same stuff throughout the week, but I'm constantly on the lookout for new things to add variety to my food list.
I just hope I can keep it up.
