As it says in the title. Can anybody with more knowledge than I think of veg that won't be too carby but it must not be high fibre, such as savoy or spring greens. My favourites:(

Thanks for any suggestions.

Hi ladybird,

It's a difficult one as it means avoiding peel, stalks and seeds and a lot of the choices are not diabetes friendly.

Some links that may help,
https://www.beatingbowelcancer.org/low-fibre-and-low-residue-diets
http://www.fibrefoods.net/low-fibre-foods

The latter seems to give more variety.

Vegetables and Potatoes

Low fibre (suitable)

Where possible, avoid skins, seeds and stalks. Keep to a maximum of 2 portions a day, in addition to potato. Try to spread your vegetables throughout the day.

Asparagus Aubergine Beetroot Carrot Celery Courgette Cucumber Leeks Lettuce

Marrow Mushroom Onion

Pepper Potato* Radish

Swede Tomato (you would have to peel the tomatoes and de-seed them).

Many thanks Catherine, as I feared, not diabetic friendly in the slightest.:(

Oh well, some more weight loss is in the offing, there is no way I'm eating white refined anything. I suppose that is one good thing lol.

There should be loads of articles online of perfect veggies for you to eat! No carbs, lower insulin. It's all good for me!
