Hello everyone........ As I was searching for healthy food for diabetics type 1........I came across bread made by almond flour. Eggs and baking powder is added in it and some people add vinegar and bake in oven just like cake. Has someone tried this......Is it good for those doing Keto diet. Please share your valuable opinions. Thanks.

I make a coconut bread mug cake in the microwave. Only 4 net carbs, fun and easy to make. Maybe your son would like to give it a go. 2 tbps coconut flour 1 tbsp of olive (sunflower whatever) oil 1/4 teaspoon baking powder, 1 egg, 1 tablespoon of cream. Mix them all up in a mug then pop in a microwave for 90 seconds. I have it with my scrambled eggs in the morning.

Wow that is great.........I will surely give it a try.....but should the coconut flour be fine or coarse......because as far as I know coconut powder is not very fine........do you have a picture of bread

Here is a picture. I grabbed it from a website www.headbangerskitchen.com - lots of fun keto recipes. The guy who runs the site does cooking demonstrations on youtube.

I got my coconut flour from Tesco's.

I will try that for breakfast because I have yet to find anything suitable after a lifetime of toast. Thanks.

The coconut flour I've occasionally used for baking is very fine - just like "normal" flour. You can also use sesame seed flour which is also very finely ground, and contains lot less carbs than the coconut: http://sukrin.com/en/sesame-flour/about/

This is great thanks! It reminds me of a scone, I am going to try adding some cheese to it.
