Almond flour

Well done to you, @daisyduck, and thanks for the recipe link. I've been building up the courage to try making things using alternate-flour type ingredients - much outside my comfort zone - and this one looks very doable. Have bookmarked it for later :)

It was easier than I thought. Have you tried Oopsie bread ? That is such fun to make and very versatile.

I made half of it into the "baps" and sweetened the rest with a little Truvia and made a raspberry roulade
 
"Easy" I like; I have seen oopsie bread mentioned but haven't tried it yet - that's another one on my list of 'to try'. Cooking is not my thing - beyond the basics needed for survival .:eek: :D

I'm really enjoying the challenge of relearning how to bake. Each time I have a success I plan how to adapt a recipe. My next cheesecake will be a strawberry or raspberry swirl I think.

The weird thing is I've been on LCHF for 2 years now. The first year I lost 2 stones and then I have stuck for the second year. I've found it easy to maintain the weight but I just couldn't lose any more... and there is about another 2 stones there to lose.
I decided to just have fun with the things I know I can eat which don't affect my BG.
I've had a dessert every day for the last 10 days.. and guess what ? ....... I've lost 2lbs !!
 
You can also grind up whole almonds in a food processor. Works great but you neighbors will think you have a freight train in your kitchen. Very loud.

It is cheaper, and whole or flaked almonds are more readily available in supermarkets
