am I doing this right?

I'm finally accepting that I need to embrace low carbs, against the standard advice through the gp, and for the past few days I've cut right down - just having some porridge oats mixed with chopped apple and cinnamon for breakfast and an occasional potato.

So basically I'm sticking mainly with vegetables, fruits, nuts and dairy (yoghurt and eggs mainly) - am I doing this right? I'm not a big meat or fish eater although I will probably eat it occasionally. Does anyone have any tips to make things more filling and also less expensive as I'm on a low budget? Also, are pulses okay?
 
Nuts are good - I eat loads. Low in carbs and low GI, but beware cashews. Not actually nuts at all. and high carb/high GI
I eat a little potato, but how you cook it and type of poptato is important. The small new potatos boiled (not over-boiled) are best, but only a couple! Old poptatos are too starchy, although if you roast them the fat helps to slow the absorption and thus conversion to sugars in the blood.
You have to be wary of fruit. It all has carbs in the way of fructose. The berries are best. Strawberries, raspberries, blackberries etc. Most of us find bananas are too high in carbs, particularly the very ripe ones. I have berries, or an apple a day, and a small satsuma.
With vegetables in general, parsnips are highish in carbs, and overall those that grow above ground are better than those that grow beneath the ground.
Dairy is good; look at the carb content on yoghurt. Some are higher than others.
Some can tolerate porridge for breakfast, or some cereal. Others have very low carb breakfasts with omelettes etc.
Best thing with all this is to test 2 hours after eating, and if your B G is too high, youknow you need to cut out or cut down on that carb content.

Thanks for your reply Grazer. I didn't know that about cashews and a while back had cravings for them. I will try to eat more berries and other nuts now. As for dairy, at the moment I just eat natural probiotic yoghurt (I find Yeovalley the nicest) plus eggs and occasionally cheese (although I am a cheese lover so that can be my downfall sometimes).

However, this all these types of food seem to cost more which is rather troubling. The thing about carbs is that they are cheaper - but I know I've got to do this for my health - I just hope that I can afford to eat well enough to stay well.
