I think I may be reading the labels of food all wrong as some of my levels lately have gone up more than I would of liked.
When reading the carb level of Y of which sugars are X, I have been reading the sugar level only and trying to get this as low as possible, should I be also looking at the carb level and keeping this low as possible?

It is the carb level that needs to be read as carbohydrates digest down to sugars. A rule of thumb is to look for foods that are less than 10g of carbohydrate per 100g.
