For anyone who has read my posts, they will appreciate that I think its the PUFA oils that have caused our major problems.
Basically the thesis goes - PUFA is uniquely fattening because it does not give satiety signals, so combining it with carbs leads to a greater carb. intake ( up about300 cals per day since the 1970's) it is also inflammatory leading to the explosion in all kinds of symptoms of hyperinsulinaemia of which obesity and diabetes are merely two of the many other detrimental outcomes.
The % of LA ( PUFA oil) in human body fat has pretty much tracked the growth in metabolic disease.
When you adopt an LCHF diet - the first thing that goes is the refined foods and that leads to a dramatic reduction in PUFA and in my opinion it is this that then starts one back on the path to metabolic wellness .
so far so good.
Then we take the focus on " getting down cholesterol" - so much effort to do that over 30 years. We have done that in two ways
a) replacing saturated fats with PUFA known to reduce cholesterol and b) statins
What does cholesterol do? amongst other things it synthesis the sun to give you vitamin D. - so hey presto we have seen an explosion in Vitamin D deficiency - also implicated in many major diseases directly leading on from the consumption of PUFA and statins.
Finally we see increasing evidence that exposure to the sun causes melanomas, and therefore the need to cover up and slap on sun tan lotion when outside - what does that do? it prevents the remaining supplies of cholesterol actually producing the Vitamin D you need . all in all a vicious circle.
Soo how does LCHF work ? it stops the PUFA, which reduces the appetite, and reduces your inflammation and if you allow your cholesterol to do its job, then your vitamin D levels go up and the cycle becomes a virtual one.
Take it a step further - those of you who have wholeheartedly adopted a no PUFA oils regime may also have noticed another side effect. - that is the absence / reduction of sun burn.
I've just spent three weeks out in the sun 12 hours a day, I burn easily ( or at least I did) did I wear suntan lotion ? NO did I burn ? NO . why not?

The virtous circle becomes complete - sun, LCHF, cholesterol, vitamin D => health

So advice to eat vegetable oils, reduce cholesterol and cover up in the sun - a perfect trifecta of disease proliferation!
