Varied my berry muffin recipe today to make rhubarb & ginger muffins - very nice if I say so myself
Basically mix everything together, spoon into 11 muffin cases, bake at 140 degrees for 20-25 mins
Eat & enjoy - I felt the need to fully road test them! and they were very nice just out of the oven with a dollop of creme fraiche as well as cold
Ingredients
Baking Powder, Average - 2 Tsps/4g
Almonds, Ground, Average - 200g
Eggs, Large, Average, Weight with Shell - 5 Eggs/340g
Creme Fraiche, Half Fat, Waitrose - 150ml
Ginger, Very Lazy, The English Provender Co. - 3 -4 tsp
Rhubarb, Stewed, without Sugar - 1 Serving/100g
Sweetener, Tablets, Splenda - 30 Tablets/3g
