Any new addictions?

50g butter, melted in the microwave
3tbsp ground almonds
1 1/5 tbsp sweetner
1/4 tsp vanilla
Pinch of salt
1 egg
1 tbsp cocoa powder
1/2 tsp baking powder
2 squares 70% dark flavoured with orange chocolate ( I use Aldi as it's cheap)

Melt the butter in a bowl, add remaining ingredients and divide into 2 mugs and nuke for 1 minute per mug. Leave to stand for 1 minute. It doubles in size when cooked. My microwave is 900w so might need to experiment if lower wattage.

Scandichic that sounds heavenly....off work tomorrow so three days off instead of two, am going to try your ice cream recipe too...:p... move over Franks DB ice cream....;)

85% Aldi chocolate . As it comes in mini sized bars , that's my treat and I get anxious when I'm running low on it, sad, I know!

And I agree with Spiker. This forum, I'm spending way too much time on here, when I should be doing other stuff LOL. It's just so good and I neeeeed my fix...don't take away my laptop... I can give up any time I want...honest....

My chocolate cheesecake, cheesey shortbread, almond shortcake, and blackberry & apple crumble.

Thick and sour cream , most nuts, esp. soft goats cheese with walnuts, Lindt 85% dark choccie.

I was already rather partial to blueberries and yoghurt, raspberries, cherries and strawberries so I suppose they don't really count? A lot of what I ate previously I can still eat & enjoy.

And I suppose it goes without saying: a daily dose of forum :p:p!

I've modified it a bit, and use 3 instead of 4 eggs now, and cook in large silicone cupcake moulds in the microwave for 31/2 minutes on medium - or until toothpick poked into middles comes out clean. The quantity does enough for seven servings so I can have one a day.:):)

PS I'm going to try your choccie orange sponge for supper tonight - I have some orange essence which I can add to my plain Lindt chocolate - and I use this with cream on my cheesecake too.

Thank you! I found another one which might appeal to you. It's for a variation of Black Forest gateau. I have translated it from Swedish into English so here goes:

Cake bases

200 g ground almonds
3 egg whites

Filling

4 dl double cream
1 egg white
3 centilitres of cherry liqueur
A few drops red food colouring

Topping

Cocoa
100-150 g dark chocolate in thin slices

Method

Cake

Turn oven on to 150 grader. Draw 3 circles on a piece of baking parchment with a middle sized plate and cut them out. Put them on a baking tray. Teflon or silicon baking paper is best.

Whisk the egg whites till stiff and stir in the ground almonds. Divide the mixture into 3 and spread over the 3 circles of baking paper. Bake in the middle of the oven for 10 minutes.

Filling

Whip the cream and egg white together until thick. Divide into 2. Add the cherry liqueur and food colouring to half the cream.

To assemble the cake:
Place a cake layer on a flat plate.
Cover with a layer of cherry cream.
Add another layer.
Cover with a layer of cherry cream.
Add another layer.
Cover whole cake with plain cream and cover in bits of chocolate.
Sprinkle with cocoa before serving.

My new addiction is Lindt excellence 90% cocoa chocolate, just 1 square at a time but it is my daily "pick me up"!

...you're very controlled Keli, if I buy Lindt dark chocolate I just have to have two squares, its great in the freezer makes it last longer....I don't mean I get in the freezer to eat it lol, I usually take it out would you believe..;)

@Scandichic I tried your ice cream but made it with strawberries yum..:p

I usually have to make it with strawberries - under family orders!
