Hey O_DP_T1, coconut oil is our go to for cooking and I haven't seen any rise as a result. I am a TD2 but I don't think makes any difference. It has a higher smoking point which is why I like it for my eggs and salmon...It certainly has a lot of health benefits and I would encourage you to give it a go. And, as always test Cheers/L

What does it taste like? Can you taste the coconut or can you use it to cook anything? I've just bought some because it was on offer. I seem to be buying a load of odd stuff
I use it regularly but not in large enough quantities that it's likely to raise my levels. I haven't noticed any particular coconut taste.
@SueJB It's quite a versatile product! I'll also sometimes put a dollop in my coffee or more often in my soup. You can also make treats like low carb "Bounty Bars", fat bombs, and mock chocolate by mixing it with cocoa (and sweetener or orange or peppermint flavouring), and some low carb baking recipes use it instead of butter. It is an MCT, so a source of faster energy than other kinds of fat and can also be used as a beauty product for skin, hands, hair. I give my dogs a teaspoonful with their dinner - they love it and it helps make their coats beautifully silky.

I agree with Sweet_ Sophie in that it really doesn't have a strong flavor at all. And Robbity's suggestions are all great. If you have chapped hands in the winter months, some coconut oil on them and go to bed with white gloves on and it works wonders. Also good for doing that to your feet if they are dry and rough!! Just remember to wear socks if you don't want to mess your sheets with the oil! Cheers/L

I also,use it to make chocolate bars. I also use it in chocolate orange chia pudding - melt coconut oil, combine with cocoa, erythritol and some pure orange extract them blitz the lot in my vitamix with chia seeds and silken tofu and a dash of soya cream ( Im off dairy due to intolerance issues but would replace the tofu and soya cream with thick double cream if i wasn't)
