I have locally and artisan bread maker who does several loaves which are perfectly OK for a type 2. The Sisu is my favourite follwed by the New York Rye and Hearth Loaf. You can see the ingredients here, http://www.thehandmadebakery.coop/our-bread
The Bread Matters web site has a real bread finder which allows you to enter your postcode and see if there are any near you. They tend to use whole grains and add various brans so most should be low GI breads. Even the hearth loaf above, which uses a sponge which is white flour, does not cause a rise in me as it is only used to start the process of leavening.
