Aubergine Lasagne.

Hi.

Can anyone point me in the right direction for the recipe for low carb aubergine lasagne please? I am hoping I have everything to make it for tomorrows tea. Thanks in advance lovely people :wink:
 
Thanks Patch. That looks tasty! I suppose I could use the aubergine I`ve already bought, instead of the spinach.
 
Hi, just fry the aubergine in thin slices, then use it as you would pasta, layering it up.
 
I'm having left-overs tonight from Monday night's Aubergine Lasagna.
I love it.
I picked up a lovely low carb cook book in the charity shop.
ISBN 1-74045-393-X.
Recipes are classified according to carbs per portion. It's a nice book and the recipe so far have been very good

Thanks Dawn. I was hoping for a low carb sauce idea really.
 
I make lasagne layering with celeriac and /or aubergine ,if you have time to leave the lasagne in the oven for 30 mins or so dont pre cook the aubergine or celeriac but it must be sliced thinly. My meat filling has lots of onions and garlic and my cheese sauce is softened butter with milk beaten into it and then I add lots of cheese ,this way I dont need to add any thickener to the sauce after layering up grate cheese on top ,a sprinkling of paprika and a couple of slices of tomato

All the help with food is so positive for someone like me. I love to eat, and it shows we don`t have to have a dull diet :D

Absolutely not. I know with each meal I am full and rarely snack. If I do it's usually just a small handful of walnuts, or as someone here suggested a low sugar jelly (I added a dollop of fresh cream to mine) :oops:

Had aubergine lasagne yesterday, lovely, very filling and low carb. Thanks for mentioning it has now been added to our list of staples.
 
tonight was lasagne night - herself prepared the Aubergine by slicing it thinly, sprinkling salt over it and leaving it for half an hour and then frying it in a bit of olive oil before assembling the lasagne and it was even tastier.

I love lasagne night - much much better than homemade soup night :?
 
This is our family favourite with never any left-overs!
-I slice the aubergines and grill them first until partly cooked and put aside.
-I make a tomato meat sauce (fry mince, onions, drain fat, add, garlic, mixed herbs then add 2 cartons of chopped tomatoes from a carton/tin and cook until it thickens a little.
-I make a cheese and spinach sauce (wilt spinach in a pan first to try and get rid of some of the juice/ make a cheese sauce with lots of cheese and mix in spinach with pepper and a tiny bit of grated nutmeg). Cook until between the thickness of single and double cream.
-Get out my deep oblong casserole dish.
-Layer of meat sauce then aubergines then cheese sauce
-At this point I add 1 single layer of ready to cook spinach lasgne sheets (keeps the non-carbers happy an does not upset me too much)
Repeat the meat, aubergine, cheese sauce and put in an oven at 190 for 50 minutes.
-YUMMY!
