back on it

the heat
been really bad with eating lately
basically eating what i was before diagnoses and it showed on the scales this week with a 3lb gain :( and my glucose levels were never below 6
last nights tea was cauliflower rice mixed with onions and mushrooms and topped with cheese with a couple of filled sweet peppers, it was actually pretty good, would have been better with cheese mixed in it though
same for tea tonight
going to stock up on cauliflower and broccoli rice as they can easily be cooked up with cheese meat and veggies ect
looking for alternatives to pasta and bread
now the weather is getting better i can start on meat and salads
 
38 is a very fine result from your last test result! Good for you for climbing back on the waggon.

Personally, I hate cauliflower. I mean, really hate hate the stuff. I've given up looking for carb alternatives, and I really do't miss or crave carbs any more. Fortunately, I like salad. I eat it every day. Here is my current take on food:

When the kid complains of hunger I tell her to have an apple from the fruit bowl. When she declines, I tell her that she really can't be that hungry, then. Same rules now apply to me - if I don't 'fancy' salad, I really can't be hungry, so I just wait until I am ready for it. And yes, I really do enjoy it every single day.

Just posted something similar about falling off the wagon.

I have made myself cauliflower soup - chicken stock, an onion, some Thai Red Curry paste, half a cauliflower as florets and all the green leaves and stalky stuff chopped up. Lifted out some florets after cooking and zapped the whole thing with a stick blender then put the florets back. This and a Lidl roll will be my evening meal for some time to come.

Then again, I like cauliflower.

Restricted diets can be boring, but some loin girding is required for a while.
 
@licklemoose - it happens to the best of us. Thankfully low-carb options are always tasty and enjoyable, so it's nowhere near as difficult getting back on the LCHF wagon as it is to restart one of those boring low-cal, low-fat diets.

I'm with you on the cauliflower, but have noticed my taste buds have changed over the last few years and I can now tolerate small amounts. I do like the 'green rice' from Iceland if after microwaving it is then turned into a stir fry with salmon and a knob of butter. A granddaughter (11) puts me to shame with the amount of veg she eats. She has gone semi veggie for a few months and adores just a huge bowl of roasted parsnips and sprouts for her Sunday lunch, with a large blob of Colmans on the side. Errgh!
