Baked potatoes and really good bg's

Had 2 small jacket potatoes today with butter and cheese. Was gobsmacked two hours later to find that bg's were only 6.5!

Usually make some sort of meat casserole to take to work with loads of veg and 25g red lentils but no spuds but yesterday decided to try with 100g and take a reading. That was 6.0 and then last night because I worked late just checked chicken breasts in a sharwoods tikka massala sauce and had with chips and that was only 6.6.

Am really pleased with these readings because I never for one moment thought I would get away with eating any potatoes. :thumbup:
 
Thats great Sue. We were thinking alike. I had a meduim size potato and I spiked to 6.8.
I believe that if the potato is boiled and retrograded in the fridge for a min of 2 days, then it loses its starch and wont spike at all. I keep 3 or 4 potatoes in the fridge, in case, so I just micro it, and it seemed ok.

Glad we can indulge sometimes. :D
 
Glad its not just me Virgo. Its the only starchy item that I really miss. Had another one today and it was only 6. Will keep testing and keep an eye out for any changes.
 
Glad you can cope with a little potato, but don't go mad! I find that once is okay - try it every day and my BGs start creeping up!

Just out of interest - try testing 1 hour after your meal and see what the reading is then. Cooked potato is supposed to hit the blood sugar very fast, and come down again quite quickly. All that cheese and butter will help too :D

Thanks Viv. Definitely wont be going mad with potatoes, but be nice treat now and again to have a little bit.
