Baking with fructose

Hubby is type 2 and controlling it with diet alone. He has got quite a sweet tooth so I have been using fructose when making him the odd treat but have recently heard something that says its not good for us. Is this true, and has anyone else got any other suggestions as to what to use, he doesn't like the taste of artificial sweeteners like Splenda.
 
Anything ending in "OSE" isn't very good for us. You say he doesn't like sweeteners, but I find that when used in cooking you can't taste them PROVIDING you use the heat stable ones. Canderel do a "canderel yellow" which is heat stable and designed for cooking. Just remember when using recipes that you don't use the same WEIGHT of canderel as you would sugar, but the same VOLUME. so if the recipe says eg 25 grams sugar, which is 5 teaspoons, DON'T use 25 grams of canderel but the same 5 teaspoons. In fact, I use a little less; about 4n teaspoons canderel yellow for 5 teaspoons sugar.
 
I imagine if you tried to weigh and use 25g of Canderel you'd need a sack full of the stuff as it's so bloomin light-I sneezed near my pot the other day whilst the lid was off and my kitchen resembled a narcotic factory!! :lol:

Not quite a 'sugar high' but...... :lol:

My parents used to live abroad. My mother would come back regularly to see my grandma and, whilst home, she would stock up on sweetener, horlics and coffee whitener. In order to save suitcase space and luggage allowance, it was all decanted from jars into freezer bags.......she never did get stopped by customs, but I often wondered what they would have made of a lil ol' bid with suitcase full of white powdered substances!

Thanks, just checked the cupboard and it is the splenda one I used so will have to give the canderel one a try. I have also seen xylitol in Asda, is that any good?

Xylitol is good, but it's also a potent laxative in bigger amounts, so I'd advice caution if used in cooking or baking. Eat a pack of xylitol drops and you'll see...
