Long term diabetic 2 on very small basal insulin dose. Maintained normal readings 38-39 over three years on low carb with the help of that insulin.
Bought bean to cup coffee machine for Christmas and enjoying a couple of black coffees a day. Hubby likes cake…ginger fruit cake. I tried it and liked it and thought I could manage a small slice of cake/ coffee and yes it spiked me but it came down fairly quickly so once became more often and then it was time for my A1c.
And that came in at 42!!! Not hugely awful in the bigger picture but defo a wake-up call.
Nothing else changed in my diet other than the cake. So now it’s back to my lovely coffee but without the cake and hopefully things will settle down again.
My diet isn’t hugely restrictive and I don’t feel deprived… the cake/ coffee just became a habit. Lesson learned.
