Check it out in the Collins Little Gem. Boiled Beetroot 9.5% carbohydrate. Now less than 10% of a little bit isn't much. So depends on how much you plan to eat and whether and what medicine you use. exercise/diet only folks probably need to run round the block if they eat a big one.
Don't forget it turns pee and poo red, so no panic about a lurgy
I love it and eat it in SMALL portions. I prefer it "native" to pickled.

I used to love to eat loads of pickled beetroot pre-diagnosis. Reminds me of a time I overindulged bigtime. Got up in the morning to go for a pee and happened to look into the toilet bowl before flushing - my eyes nearly popped out on stalks with the shock of seeing bright red toilet water. My heart was racing. All I could think of was that my kidneys were packing in, until I remembered all the beetroot I had eaten the night before. Spent all morning drinking gallons of water and peeing just to check it really was the beetroot and not knackered kidneys

Chop it up and put it in a food processor, lovely raw with a bit of cider vinegar.

Why spoil a food by boiling it...

Country & Western!
I love it grated, raw, with grated carrot & orange segments... yum! Need to scrub your fingers afterwards though.
I must say, I just bought the Collins Gem calorie counter, after seeing everyone recommend it, but I was a bit disappointed. It doesn't seem to be geared towards cooking your own food - most of the values are for prepared food. I weigh my ingredients before I cook them.....

This is a bit off topic
Years ago I was teaching an elementary chemistry lesson and showed the kids some crystals. One little lad( it had to be one of the best behaved ones :) ) sneezed into a small container of potassium permanganate and inhaled a few crystals. His mouth immediateely went brown, butI got him to rinse anyway and at lunch time mentioned it to his form tutor. He'd already been to see her to report he'd been "Weeing pink". No harm was done and it's funny looking back.
