Have prepped a couple of salads for this week, problem is I'm relatively new to salad (ergo salad dressings) and wanted to know the best one to pick up in the UK that's flavoursome and from where please?

Olive oil, vinegar, salt, pepper.
Add some mayonnaise and/or mustard if you like a thicker dressing.

I love the flavour of balsamic vinegar, but be mindful of the carbs if you use that.

Depends if you want to keep low carb or not. Do you?
My preference is good old fashioned mayonnaise, or lemon juice with olive oil. Depends on the contents of the salad.

Mayo,
virgin olive oil with any added flavour like garlic, mustard
make caeser dressing with mayo Greek yogurt and grated Parmesan, make your own as ready bought has sugar in.
Mayo with harissa paste thin down with Greek yoghurt or double cream.
Do the same with avocado, mash and thin with cream or yogurt and a few chili flakes and a squirt of lime.
Sesame seed oil with a bit of grated ginger and grated garlic add a little bit of sweetener to balance the flavour.
All these are great on hot veggies too

Depends very much on I'm eating, as I rarely eat a basic lettuce, tomato, cucumber, etc, salad. but I'll generally add olive, avocado, walnut, or toasted sesame oil with lemon or lime juice, and/or a bit of salt, pepper, mustard; or: avocado mayonnaise; or yoghurt, sour cream with various herbs, ginger, garlic; maybe a bit of added pesto , harissa, salsa, various spices, grated cheese, olives, cornichons, chopped nuts... (Similar to @lovinglife's suggestions)

If you want one off the shelf I think you'd be best avoiding ones using the usual canola or sunflower oils as they can be inflammatory. Also, obviously, avoid added sugar!
It can be tricky to find commercial dressings made with good oils (olive oil or avocado oil for example) but if you have an immersion blender you can make a creamy mayonnaise at home. Search Keto mayonnaise on youtube for the method. It should keep a week in the fridge....I have totally been meaning to make some myself!
But the easiest option I find is just to shake up a vinaigrette in a jar using 2 - 3 parts good olive oil to one part vinegar or lemon juice plus some salt and (optional) mustard and/or fine chopped herbs.

Edited to add: I had a bit of a search and see there is a UK company called Hunter & Gather who look to be making high quality dressings. No doubt there are others too.
Some of the supermarket dressings that feature "olive oil" on the front label turn out to contain mostly rapeseed/canola, so it is a bit of a minefield out there!

Yes they are my go to brand for avocado mayonnaise, but very expensive, so I try to look out for their special offers.

What’s an ‘immersion blender’?

I'm in NZ so I didn't get so far as checking out their prices but I imagined they would likely be quite expensive. It's great to have the option of a quality convenience item though, and yay for special offers!!

Sorry. I called it a stick blender for a decade. ...Then I watched some Youtube videos and adopted a new terminology.
Of course you can use any kind of blender to get the same result!
