Best oils for cooking

I suspect this topic has been done to death, but it appears to be playing hide & seek with me lol

What is the best fat to cook with please? Don't actually cook much but need to buy something for sautéing mushrooms etc. (not deep fat frying)

What are your recommendations please?

Avocado oil or butter.
 
Extra Virgin Olive Oil.

Coconut oil.

Some oils when heated can turn to transfats. Coconut oil doesn't. My consultant said it was good too.

2 of my step sisters that all got cancer were all told to change to coconut oil. One had breast cancer (double masectomy), one anal cancer.
Whole family susceptible, but the consultants that advised coconut oil to them were from Spain and US.
It actually stunned me that my consultant agreed that coconut oil good in UK....

This makes 3 for coconut

Clarified butter/ghee can take the heat too and is a good fat

Everyone has forgotten about the lard tin in the kitchen, but I have one
 
Virgin olive is great but when you can get it though pricey hemp iis even better.
It's the most complete and nutritious
oil on the planet not to mention super healthy.
Slightly nutty taste.
