Will see how my BG is 2 hours after that.You should pay attention to both readings, though it's not essential that you actually do two, just know what you are aiming for at particular times. Our rule is never above 7 at one hour, never above 6 at two hours. However, there are some meals which spike later and you need to look out for these. Typically late spikers would be meals with a lot of fat, as well as some carbs, but "real" porridge, the sort that takes ages to cook, also spikes late in this household.
