BG levels after meals

Hi all,
I’m using a BGM to test different foods and quantities on myself.

I fasted from 7pm yesterday until 12.00 today and then had a Raw Slaw made with red cabbage, 1/2 carrot, 1/2 fennel bulb, celery, apple and walnut, with Greek yoghurt and lemon dressing and a portion of Smoked Salmon.

Before eating my BG was 5.4 but after eating, just 45 minutes later, it was 8.8mmol.
I understand that after 2hrs it should be 2 mmol or less than the pre meal number, so in my case 7.4mmol.
Is it ok that it went higher during that 2hr period but then came down or do I have to adapt the meal so it never goes higher than 2mmol during the two hour post meal period?

Everyone’s BG will go up after eating even those without diabetes- it’s how quickly it comes down that matters. If you were 2 points or less at the 2 hr mark then that meal was ok for you.

I personally try to aim for less than 2 or even back to where I was before I ate at the 2 hr mark, but I’ve been at this 14 year you are very new and just learning what food does what to your numbers, your doing fine, once you get to grips with keeping the rise at 2 then you can begin to tweak things so it’s less.

Your meal sounds delicious by the way, I love a homemade slaw and smoked salmon is one of my all time favourites. If you want to try and reduce your number further you could tweak your slaw to half the portion of carrot and apple or leave out the carrot altogether, that would reduce the carbs for you. I cope quite well with a bit of apple in a slaw but I know others struggle with apple, it’s a personal journey and we are all different and can tolerate different things

Everyone’s BG will go up after eating even those without diabetes- it’s how quickly it comes down that matters. If you were 2 points or less at the 2 hr mark then that meal was ok for you.

Thank you lovinglife, thanks for clarifying, I thought I’d blown it on that meal but the numbers almost matched after the two hour period so I guess this is good for me. I will take on board though to be careful with the carrot and apple portions.

Of course it’s ok to ask :) carrots although a vegetable are quite high in carbs, like most below ground veg apart from celeriac (which is fabulous grated for a slaw) and swede and turnip. Most of us T2 whose use diet only find carrots, parsnips, beets and of course potatoes raise our BG too much. But we are all different and you may be ok with them, the only way you will know is if you test and see what they do to your own BG.

I've always loved chomping on carrots, and the advice that they were on the naughty list for low-carb was a bit of a shock.

but, after a few months of... if you like, stage 2 low-carb (where you realise that all these other things like the sauces and mayo are also laced with sugar) - I now find the odd carrot very sweet, which probably tells you that it really is true (still, if the odd carrot is a guilty pleasure... I say that's not so bad...)

.......or you could convert to cucumbers - they taste really great once our palate adjusts to low sugar and low carb. Especially if home grown and old-fashioned varieties.
