Blackberries

Has anyone got any low-carb blackberry recipes they can recommend? I've just picked a load and have been enjoying scoffing them as they are and will be mixing some with yoghurt. Will probably have some indulgent not so low carb blackberry & apple crumble/pie and maybe a cheeky bramble whiskey.

Blackberry ice cream or sorbet or muffins or 'blackberry torte' (see pic) and freeze some for winter,

oh and dont forget to collect elderberries if you can (viewtopic.php?f=5&t=46016&hilit=elderberries)

I'd make a low carb pie with them :p. Splenda to replace sugar to sweeten them for the filling. Use carbalose flour to replace plain flour for the pastry, and they should cook up like any pie, but with low enough carbs to scoff a lot of it :).

Never heard of Carbalose flour - where would you get that and does the pastry made from it taste like normal pastry?

I got it from here: http://www.avidlite.co.uk/acatalog/Carb ... LB077.html. It makes great pastry and tastes normal to me. It makes **** bread though. It's not a flour that rises well, but it's great for pastry :).
