Blackberry muffins

5 large eggs
200g ground almonds
2 tsp baking powder
2 tsp vanilla extract
1-2 tbs Splenda
2 Tbsp lemon juice, yogurt or cream
100g blackberries or raspberries

Mix everything together, divide into 12 muffin cases and bake in the oven at 150 degrees for 25-30 mins
140- 150 cals and 2.5g carbs each
 
Can I clarify a bit of the recipe, is it 2 tablespoons of lemon juice or yoghurt or cream?

Yes - Lemon is nicer with blackberries, cream/yogurt are nicer with raspberries
 
I made these and they were yummy. :D
I only had 150g of ground almonds so made up the other 50g with flour and I used blueberries and buttermilk instead of yoghurt. I also used Tesco Stevia instead of Splenda.
They only took 20 mins to cook and I gave them a very tiny sprinkle of icing sugar on top.

But very nice indeed and will be making them again :)

Glad you enjoyed them. I tweaked the recipe a bit today and had 35g coconut flour in place of 50g of almonds,added another egg and replaced the Splenda with a few drops of liquid stevia - it worked well also tried it with blueberries which came out well
