I'm still learning. Mad at myself right now. I had a solid lunch, lots of fat from mayo and avocado and did have some kettle chips, tuna, a tomato and lettuce. I had a 4 egg omelette for lunch with veggies and 1/2 an avocado. That held me well. Anyhow, at lunch I felt I 'needed' some carbs so I had some of the chips. I was dealing with a bad headache and lightheadedness all morning so I blamed it on low carb. Well after lunch I checked my blood sugars and they were 85. Because I was still a bit lightheaded and had a headache I thought maybe I needed more carbs. STUPIDLY I had a dense of a very natural frozen type ancient grain spelt bread (I know, not gluten free) but I had 3/4th's of it. I've been checking my sugars. Slowly creeping up. Just checked and I'm at 134. I know it's not crazy high but I always get scared seeing that rise because it means my body must bust out the insulin and what goes up must come down. Is it okay to rise like this? What range should I stay in? I feel like never going over 100 is possible through low carb but it is okay to go up higher? I'm trying to understand. I found it interesting it didn't rise with the chips but that piece of bread sent it up. Grrrrrrr, I feel like I keep 'messing up' even though I know this all about learning.
I just took blood sugars again, it looks like they are headed down. I am looking at the log... So it went from 86 to 132 in a little over 30 minutes with 3/4 of a slice of dense, no sugar spelt bread.
