Difficult to know without knowing what meds you are on and what sort of carbs you normally take with those meds.
I'm guessing it was the chips.... Though the apple wouldn't help.... Did you try taking your blood sugar at bed time?
The chips, the batter on the fish and an apple are all things I wouldn’t eat, too high carb for me and a lot of Type 2s. You need to check your blood sugar before and two hours after a meal to really assess it’s effect on you. No I didn't might try not having a apple what are the best carbs to have I don't have much pasta or rice or potatoes thinking of not having bread what would be best to have before bed

Rice, potatoes, bread and pasta seem to be the things that many of the T2s on here avoid or cut down on. But everyone is different, the only way to tell what you can tolerate is to do blood tests.
Is there a reason you need a bed time snack? If you're hungry you could go for a low carb one?
