Blood glucose dysregulation can certainly affect the eyes, but as I understand it, the problem could be high or low blood glucose.
For myself, even with reactive hypoglycaemia, and recurring very low blood glucose events, I have never had the lows affect my eye sight, but I have had aching eyes the day after a bad hypo.
On the other hand, I have had blurred vision from rapidly rising blood glucose, followed by rapid drops (not necessarily to hypo levels). The worst time was when I had an oral glucose tolerance test, which spiked my blood glucose very high, and then it returned to normal within a few hours (I ate before it dipped into a hypo). I had blurred vision for a couple of days after that.
On the other hand, I have heard other people (such as Jaylee above) report that hypos affect their vision with visual field disturbances similar to the ones some people get with migraines.
Unfortunately, these things seem to be very individual, and the only real way to know, is to test blood glucose whilst experiencing the symptoms.
