Bread lover needs exciting lunch ideas

Hi there, I'm newly diagnosed T2, And amazingly i have been a good girl and turned my diet on it's head. Lost 2kg since diagnosis 3 weeks ago. However... Bread is one of my downfalls. I am a strict low carb girl now. Anyone have any tasty lunch ideas (salad is starting to get repetitive now) I can cope the rest of the day. Just stuck for lunch ideas. :)
 
Make your own low carb bread or substitute? There are a lot of recipes around if you try Google, and I think there's been a thread recently on sandwich alternatives.

I make a sort of shortbread/biscuit (from what was supposed to be my low carb version of a cheese scone recipe!) with milled flax seed and almond flour instead of SR flour, and then use the same quantities of cheese. butter, liquid and seasonings (mustard, paprika, salt pepper). I butter it and sometimes add cheese or cream cheese, eat with soup, salads, or with toasted cheese and bacon, etc.

You can make all sorts of different salads (different salad type leaves, spinach, apples, celery, avocado, peppers, mushrooms, nuts, and so on), soups, etc, pastryless quiche/flans, and no-one says you can't cook yourself a burger or bacon & eggs.

Thank you guys. I will definitely search out the low carb bread alternatives. Homemade soups, willing to give them a try. In fact willing to try anything lol. It's surprisingly easy to cut back on the bad stuff when you have the fear of god put into you with a diagnosis.
