Breakfast! What should I eat. Newly diagnosed ‘Pre’

Thanks Guzzler. I only usually have 2 meals per day even before be diagnosed prediabetic. I'm still fumbling my way round food ideas and most things are easy if I keep it basic i.e meat or fish plus loads of veg.
I'm also on occasion missing the carbs . Or rather my body is. I can't seem to get warm or stay warm unless I notch up the heating and put more layers on. I never had this when I was eating carbs. So I have eaten a few carbs, but much less that I would do and then I'm doing all that in reverse.
Shift work doesn't help. I'm quite organised but it's a learning curve.
 
My current fav brunch is done in one pan. Vegetarian sausage, halloumi, tomato, mushroom, avocado and wilted spinach.
Last fav breakfast was Colombian eggs. Chop some tomatoes, add some chilli and seasoning and saute them in butter. Add a beaten egg and scramble. Top a piece of soya flour toast with sliced avocado and a dash of lime juice. Put the egg mix on top. Breakfast is still the finest meal of the day!!
 
You don’t have to eat ham, mushrooms or cheese. The idea is a very low carb bf works best for most type 2’s. Eggs anyway you like them, any meat rolled up with a sauce or something, left over meats from the night before, etc
I generally have a scrambled egg in butter or a slice of chicken or turkey rolled up in a lettuce wrap with a flavored mayo. No reason you can’t have chicken, turkey, egg, tuna salmon in the morning. ( with mayo)
Cortisol and adrenaline raise our bg naturally in the morning and adding carbs at that time of day exasperates things. Best to save those for later but testing still needs to be done.

I am not a picky eater, I love all food but my menu has dwindled to a few main foods to control my diabetes. I eat all varieties of proteins, healthy fats and only carbs from above ground veggies, avocado and nuts. Never any grains, I use lettuce wraps instead.

It’ll take time to find foods/ meals that work bu then after testing it will become routine.

Great. I’m sure you’ll love the wraps if you love salad stuff. One of my favs is a rare crumbled burger with mustard and mayo and a few fried onions. The cold crunchy lettuce and warm gooey burger and dressing is awesome though a bit messy. I no longer miss bread of any kind. I prefer lettuce wraps. Anything goes. You can even just put other chopped veggies and a dressing on them.
I also love chopped salads ( no lettuce). Just finely chopped veggies of your choice, mine are celery, radish, green onion and avocado. Then I add some chopped protein and stir it all together. Sometimes drizzled with olive oil or added herbs like basil. Lovely.
You can roast a large pan of various veggies in olive oil salt and pepper and eat it for days. I used broccoli cauliflower onion beans mushrooms asparagus zucchini and bell peppers. I’d either hear as needed or I had no problem munching on them cold.

Good luck. It just takes a little time to find meals and testing. I basically eat the same things everyday but flavor or present differently. Most of my meals are built around proteins and avocado and then add a few veggies. I just keep it simple but never eat anything I don’t like
