Breakfast

Hi,

Usually I only have one slice of bread for breakfast. For lunch and dinner, it would be only fish chicken and vegetables.

Any other ideas for the meals? I have eating the same food for 6 months. Thanks.
 
I love Fage total yoghurt (full fat) with a few berries or
Fried bacon and sausages (but check the carb content of the sausages) Eggs would be a great choice too, but I don't have them as I don't like them or
leftover veg from the evening before fried in lard.
 
Hi Zand, I don't have much time to prepare breakfast. That's why I akways had one slice of bread
 
Egg muffins are good. I cook them at the weekend, freeze them and stick them in the microwave at work for a minute. Can't face food too early and due to never ending roadworks I have to set off at silly o'clock so these work well for me.
 
Breakfast is either eggs scrambled in butter with mushrooms and smoked salmon, omelette with cheese and nuts, egg and bacon or Alpro coconut 'yoghurt' with a few blueberries and chopped nuts. Scrambling eggs takes less time than toasting a slice of bread. There are loads of low carb recipes on the internet. I'm following the paleo diet but including full fat organic dairy. Working well so far.
 
I was struggling with breakfast Mon to Fri too so recently started making a batch of 'breakfast muffins' on a Sunday. Basically it's eggs, bacon, spring onion, feta cheese n a pinch of mustard powder baked in muffin moulds. Now I chuck two of these in the microwave and enjoy with my morning cuppa. It's early days and I'm sure the novelty will wear off but it's heaven having something other than yoghurt and blueberries to get out of bed for
 
What bread do you have?

I have Burgen Soya and Linseed bread, which is quite low carb, with eggs and bacon in the morning.

Burgen is nice toasted if you're in a hurry.
 
In my country we don't have burger soya or linseed bread. We have whole meal bread.
 
Hello Evelyn. I have read almost all your posts and am worried that things are not working out for you. I know your are depressed about your diabetes and from your description of your lifestyle I feel very sad for you and with you. I also get a sense that you feel alone. Please tell us a bit more about your life so we can better understand your needs. There are people here who are waiting to help. :)
 
Thanks deejayr. Yes I felt alone. After diagnosed last year I felt anger, fear and depressed and laying in bed crying almost everyday. The restrictions from eating bread, rice, noodles, cakes, sweet things and fear of getting complications is terrible. Sometimes i have numbness and pain on the legs too. Every morning I would only have 1 slice of bread for breakfast. Lunch and dinner for everyday was almost the same. I dont know what other things i can prepare to bring to work. I saw some recipes in the forum but yet to try. I still feel depress and in denial sometimes. :(
 
Try some courgette noodles, you can have many different low carb sauces with them.
