BS after eating

I'm really confused and wonder if anyone can offer an explanation. The only meds I take are 1 x 850g metformin every morning with breakfast. Prior to each meal my BS has been averaging about 6 but two hours after each meal it drops to between 5 and 5.5. Everything I seem to read suggests it should increase.

Try testing after 1 hour. It should initially increase, but return to normal within about 2 hours.
 
This might be the result of the type of food/drink that you are consuming and may also be the classic symptom of Rebound or Reactive hypoglycaemia.
Maybe you could as dbr10 rightly suggests, measure your B/G at the 1 hour and 2 hour intervals, and adjust your diet accordingly, by consuming foods that have a LOW GI/GL index and see what effect this has.
The Metformin will help reduce B/G levels, but isn't responsive to this extent as it's very slow acting.
It might also be worth researcing the Morning Phonomina, which is a classic symptom of B/G raised levels first thing in the Morning, and also bear in mind that exercise can reduce B/G levels after eating which I discovered for myself (I used to cycle 2 miles to work before I retired)

In addition to testing at 1 and 2 hours, I would also test half hourly after that in case you are dropping even further, which could indicate a form of reactive hypoglycaemia.

Does this happen with every meal, and what foods does it happen after? What are you doing in that 2 hour period?
 
On a low carb diet (typically 30g per day), we find that lower readings after meals are very common. We interpret it as simply the normal ups and down of the body, but without the effects of a sugar onslaught.

This morning I had a Lidl protein roll with a slice of cheese. Lunch was tuna Caesar salad minus the croutons and a few strawberries.

Yes, always happens. I have breakfast and lunch at work so sitting at a desk with no exercise.
 
Well, keep checking at 1 and 2 hours then half hourly to see what happens. If all that looks good, then you are fine. Excellent even. :)
 
I've been using a Freestyle Libre for the past week and have discovered that my BG almost always drops slightly in the first half hour after eating. Not a huge amount, typically 0.2-0.3 points. Then it will usually rise, depending on what I've eaten, but doesn't always end up higher than when I started.

5 to 5.5 is a good number between meals - excellent, in fact. Be happy!
