www.diabetes.co.uk is more than just this great forum.
If you go to the Home page, you will find an amazing library of easy to read articles with a Search at the top right to help you answer many of your questions you want to ask and other things you have never thought of asking,
For example, if you type "BG Target" in the Search field, you will find this page: https://www.diabetes.co.uk/diabetes_care/blood-sugar-level-ranges.html which will answer the question in this post.

In my view less than 5.5mmol/L (~100mg/dl) is normal. Ideally less than 5, but that is somewhat a matter of opinion, and others have different expectations. I think it largely depends whether you wish to manage type 2 or “reverse” it back to non-diabetic levels of insulin sensitivity.

When you first start low carb and your blood sugars drop you may experience 'dawn phenomenon ' where the liver dumps glucose to bring your blood sugars higher. So in the beginning your fasting blood sugars may be a bit skewed.
