Type 1 Caffeine??

Hi there,
I'm fred, I'm type 1 and have been for 8 years, I work as a coffee roaster and Unsurprisingly I drink a lot of coffee. I am aware of varying amounts of sugar within coffee beans which will alter my blood sugars. However I find myself still going high after accounting for said sugars (average 4-6mmol increase) around 2-3 hours post drink. After researching caffeines effect on blood sugar I'm still in the dark on the matter (somewhat due to my scientific understanding) if anyone has any knowledge or experience on the matter would be greatly appreciated.
 
Caffeine raises adrenaline and cortisol which can raise bs for some of us. It does mine especially in the morning. It also is known to mimics insulin.

As a matter of fact I have ( hopefully quit as of an hour ago
