So where am I going wrong?
Honestly, the things you may think are ok may be the things sending your insulin up.
The only sure way I found was to buy a Libre sensor and monitor your levels, personally, I found milk and porridge were terrible choices for me, good choices were eggs for breakfast ( i put cinnamon and Tumeric sprinkled on them which also help sugar and blood) fried corned beef and shitake mushrooms in light olive oil help at lunch, berberine capsules also help me, but you need to try foods and see what triggers your body using the libre sensor, once you know the triggers is easy to avoid them ps Greggs of any kind send mine off the charts, don't know why!.

I tried porridge and ryvita and they both sent my blood sugar high. I have given up breakfast as it helped me lose weight (I now have a BMI of 19, down from 24) but when I was eating it it was some of the following—berries (I keep frozen berries) with full fat greek yoghurt, cheese or mushroom 2 egg omelette, avocado and bacon. I can now tolerate up to two slices of LivLife bread with Marmite and peanut butter (the peanut butter stops the glucose spike). Lunch is often a salad with ham/eggs/tinned mackerel/cheese. Dinner might be pork chops/steak/beef stew/chille con carne (not too many beans)/chicken with cauliflower rice/fried cubed celeriac/three or four very small new potatoes/30 grams brown wholemeal rice. Red wine and gin with diet tonic cause me no problems either. Generally I keep carbs per meal below 30g. I test my blood sugars two hours after every meal. My HbA1c was 99 in January and is now 40 and I have halved my Metformin. My blood lipids, cholesterol and triglycerides are well within normal ranges now too. Lose weight if you need to and take plenty of exercise. It's working for me.
