Are you on a basal/bolus regime? Carb counting helps you count the carbs in what your about to eat and adjust your insulin accordingly so that you have better control.

I'm on bolus 16 units of lantus in the morning 3 novorapid at diner the 6 unit at tea time

Ok, the Novorapid is your fast acting insulin so carb counting will allow you to alter your doses of that according to the carbs in your meal. This should help get your blood sugars in range more often, and give you flexibility as to what you eat.

It's not hard once you get the idea of it :)
