Carb levels and spiking. What's your limit?

Hi guys.

Just for fun I thought it would be interesting to see what everyone's personal levels are of carb grammage per meal to cause a spike that would be a concern.

So for example, I had about 20g carb at lunch and my hour BG reading was 8.2 so I'm thinking 20g in one sitting is probably over my 'safe' limit (previous days have been 5.9 after an hour).

I judge entirely on the amount of rise from before to after. If you start high you will finish high no matter what you eat. I ignore my 1 hour readings unless they are horrendous, and go by what happens after that, at 2 hours, 2 and a half hours, or even 3 hours if it isn't back to base. The longer it takes to get back to normal, the worse it is, unless the total rise is minimal. I am happy if my total rise is under 3, preferably nearer 2 or less, and under 8mmols in total. However, I would hate to stay at 8 for several hours.
 
Personally, I couldn't decide that simply. I'm fine on rice. I do OK on some fruit, but baked potato likes to move my scores up a bit.

I would urge you to set yourself a period of really controlled testing, if you want to go down this route. By that I mean, ensure you have plenty of sticks. When you eat, you must test beforehand, as well as after. "I'm always X" won't do it for you. Record all you eat, how you felt, and if you have been active. In/Out decisions can't, in my view, be made on a once eaten food - unless it is something outrageous. Even then, some foods are worth revisiting after a period when (any) significant weight loss and control is better. Your body may be able to cope better with some things after a while.

It takes a while to get a true handle on these things. It's not a quick process, if you want robust findings.
 
Ok I'll stop making snap decisions!

I've kept a spreadsheet of everything - times, meals, feelings. I'm also well stocked up with sticks thanks to home health.

I guess I'm being impatient :(

Rice sends me into orbit. Bread too. 4 mouthfuls of pasta and I'm so dizzy it's not funny. Am like this for 2 hours then comes down gradually. Potatoes aren't too bad 8.5 for small handful of chips. 8.5 after first half hour but below 7.5 after an hour. Can tolerate 2 dsp flour added to casserole to thicken it. Funny how were all different. If I am between 5-7.5 I feel fine. Start to feel really unwell if I hit 8 or go around the low 4s. Don't eat starchy carbs. Carbs limited to cream, yoghurt, veggies and limited amounts of berries.
 
I am having huge spikes after home made focaccia bread. Just had an all time worst ..12.4 @ 1 hour yesterday. So back to counting carbs again..
