Ok, I usually try to star under 50g carbs a day, but have been trying to eat more vegetables as I wasn't eating enough to get adequate fiber before. My question is carbs from mushrooms, red bell pepper, onion, fennel, broccoli. I presume they have a far smaller effect due to the low GI and GI load, then say carbs from white bread which I haven't eaten since being diagnosed. I have been pushing 80g carbs from the past week, I feel fine. But I guess I need to get myself a blood glucose monitor to be sure. My latest A1C was 4.7 and for half of that I have been eating 30g rolled oats and protein powder for breakfast, so I guess I can cope with some carbs.

https://www.dietdoctor.com/low-carb/vegetables <-- maybe this'll help. I eat cauliflower and broccoli daily, same as leafy green salads or spinach. They're not that carby, and don't come anywhere near what a slice of bread would do. Are you counting the fibres as carbs by any chance? Because fibres don't actually count, because they never leave your digestive tract; none of that ends up in your bloodstream. Hope this helps. Happy veg-eating! :)

Usually it takes a LOT of the non-starchy stuff to make a blip on the carb-o-meter, especially leafy greens so it's not that much of a worry especially if you can tolerate that amount already.
