Carbs in chips

Hi all,

I have a question about carbohydrates in chips. I sometimes make SlimmingWorld chips in an air fryer (no oil). In the DAFNE carbs calculation book it states 100g of chips would have 30g of carbs, meaning injecting 3 units of NovoRapid. I am struggling to work out whether the 100g weight should be calculated before or after cooking of the potato. Please could anyone shed light on this. Thank you.

In my carbs and cals book 100g of cooked oven chips has 30g of carbs, so I would say it's 100g when cooked
