Carbs In cous cous

Hello all

Can anyone explain the carbs in this to me please?

I have just made a packet cous cous which states:

Typical values prepared as per instructions (just add hot water).

Carbs per 100g = 25.4
Carbs per serving (130g)= 33.0

The weight of the packet is 100g
Once prepared in weighs 260g

I understand it weighs more following preparation due to the water. But why the big jump in carbs?

I have checked carbs and cals book and 110g = 25g carbs.

I can't get my head around this today and I am really trying to carb count as near as I can to the dot as I am using a CGM for the week.

The way I read it is that the 100g prepared value is for it ready to eat with water already added = 25.4g carbs
If you eat a bigger portion of 130g then it is 25.4g x (130 divided by 100) = 33g carbs

So no jump in carbs, just a bigger portion.
 
Isn't couscous effectively just finely minced pasta?

In other words a form of dried wheat flour which can be stored for a long time and made palatable by cooking in boiling water?
